Victor Castro-Alves

Victor Castro-Alves holds a PhD in Food Science from the University of São Paulo (USP), Brazil, and is a researcher and Deputy Director of the Food & Health Centre at Örebro University, Sweden. His research focuses on dietary carbohydrates, particularly the structure, transformation and biological activity of dietary fibre-derived oligosaccharides. He leads a Swedish Research Council Starting Grant investigating how carbohydrate structures are transformed along the gastrointestinal tract and how these transformations influence responses in colonic and immune cells. His work combines analytical chemistry, mass spectrometry, sensor technology and foodomics with human and in vitro models to explore gastrointestinal dynamics and the interactions between dietary fibre, digestion, gut microbial metabolism and human health.
