Tânia B. Ribeiro is a researcher in Food Biotechnology at Universidade Católica Portuguesa, CBQF – Centro de Biotecnologia e Química Fina, Porto, Portugal. Her research focuses on the valorisation of agro-food by-products into sustainable functional ingredients, with emphasis on dietary fibre, antioxidant dietary fibre, bound phenolics and gut health. She holds a PhD in Biotechnology from Universidade Católica Portuguesa and has expertise in by-product upcycling, fibre characterisation, in vitro gastrointestinal digestion, colonic fermentation, phenolic profiling and bioactivity assessment. She is the principal investigator of UPFibre, an FCT-funded exploratory project aiming to unlock the bioactive potential of upcycled antioxidant dietary fibre through structure-driven approaches. She is also co-leader of a working group within the COST Action ENFiber, contributing to European networking on sustainable fibre valorisation. Her work integrates chemical, structural and biological assays to understand how plant fibre matrices influence digestion, microbial metabolism and health-related outcomes.
