Dr Mette Axelsen is Principal Scientist in Nutrition at Oatly. She leads internal and external research initiatives focused on the role of oat-based products in supporting healthy and sustainable dietary transitions. Her work contributes to building robust, science-based knowledge around oats, oat dairy, and plant-centric food systems. Mette is a clinical nutritionist with a PhD in diabetology, and previously held academic positions at the University of Gothenburg, including Associate Professor in Clinical Nutrition and Professor in the Dietitian program. She has contributed as an expert to ten national nutrition guidelines and reports commissioned by Swedish health authorities, and to the 2023 European nutritional guidelines for diabetes.
