Mario M. Martinez is an Associate Professor at the Institute of Sustainable Processes (ISP) at the University of Valladolid, Spain. A world-recognized food chemist specializing in plant tissues, his research has provided key insights into food structure and precision nutrition. This work naturally extends to the development of advanced in vitro models to study metabolic profiles and component interactions. Since establishing his research laboratories in Canada, Denmark and most recently Spain (InnograinLab), his research was recognized with prestigious awards and elite grants, including the Ontario Early Researcher Award (ERA), the Young Scientist Award from the Cereals & Grains Association, the Nils Foss Talent Prize 2021 and the Sapere Aude Research Leader recognition by the Danish Research Council. Mario serves as editor of the International Journal of Biological Macromolecules.
