Ivan Misael Lopez Rodulfo is a postdoctoral researcher at the Department of Food Science, Aarhus University, Denmark. His research focuses on the interplay between dietary fibre structure, polyphenol bioaccessibility, and gut microbial fermentation, using mechanistic in vitro digestion and fermentation models combined with high-resolution mass spectrometry. He completed his PhD in Food Science at Aarhus University in 2025, where he investigated the bioaccessibility and metabolic effects of polyphenols from different apple matrices. Ivan has international research experience, including a visiting research stay at Purdue University (USA), where he developed in vitro systems to study polyphenol-mediated gut–host interactions. His interdisciplinary background spans food science, biomedical engineering, and microbiology. He has been awarded a Marie Skłodowska-Curie Postdoctoral Fellowship (2026–2028), which he will carry out in collaboration between Aarhus University and the University of Valladolid, focusing on the role of food structure in modulating fibre–polyphenol interactions and gut microbiota function.
