ED DEEHAN

Dr. Edward Deehan is an Assistant Professor in the Department of Food Science and Technology at the University of Nebraska-Lincoln (UNL) and a faculty member of the Nebraska Food for Health Center. As a Registered Dietitian (RD), Dr. Deehan’s research program bridges the disciplines of human nutrition, food science, and microbiology to maximize the health benefits of non-digestible carbohydrates. His lab focuses on understanding the physiological effects of discrete dietary fiber structures that are intrinsic to plants or isolated on the composition and metabolic outputs of the gastrointestinal microbiome. Dr. Deehan earned his Bachelor of Science in Dietetics from Michigan State University, followed by a PhD in Nutrition and Metabolism and a Postdoctoral Fellowship in Nutritional Microbiology at the University of Alberta. Prior to joining UNL, he spent two years as a Senior R&D and Scientific & Regulatory Affairs Scientist at AgriFiber Solutions, where he led sustainable ingredient discovery from agricultural residuals. Using human dietary interventions as his primary line of scientific inquiry, Dr. Deehan explores precision nutrition approaches to combat chronic inflammation and metabolic diseases. His work aims to improve consumer acceptance of fiber-based ingredients, develop enriched functional foods, and inform the commercialization of medical foods and microbiome-targeted therapeutics.
