Agathe Debertrand is a Research Manager in Plant-Based Ingredients at Puratos, an international group based in Belgium offering a full range of innovative products, raw materials and application expertise to the bakery, patisserie and chocolate sectors. She has held this position since 2022 within the upstream research department, where she focuses on understanding ingredient behavior in complex food systems. Her work is centered on hydrocolloids and fibers, which she leverages to design solutions addressing taste, texture, health and well-being, and clean-label challenges. Since joining Puratos in 2019, she first worked as a Global Graduate Trainee, contributing to health and well-being projects in the chocolate category. She holds a Master’s degree in Food Science, specialized in Food & Health, from UniLaSalle (Beauvais, France), during which she completed her Master’s thesis at Puratos, focusing on enzyme-based solutions for bread improvers.
